Can you cite a paragraph in that book that backs you up?

Each gram of fat = 7 calories, and each gram of protein = 4 calories. So if my chicken breast contains 22g of protein (= 88 calories), and less than 1 gram of fat (7 calories), then how can "most of the calories come from fat" ?

Federal regulations prohibit use of hormones in chicken. Now, if they're still using them, I'm not going to lose sweat over it. Do you lose sweat over the fact that many vegetables contain toxins? For example, there is a little bit of cyanide in apple seeds. And do you really think that farmers ensure that their soil is free of heavy metals, dioxins, and industrial chemicals that might exist? And do you think rainwater is pure these days? How about the tapwater they use for irrigation, there are traces of pharmaceuticals in nearly every city's water supply that can't be filtered out through normal means.
