That's probably because the restaurant that served your gator either a) didn't know how to prepare alligator meat, or b) used meat from an old ass gator.

every gator ive ever eaten has been awseome. It was like steak, not rubber.

Kangaroo is on my list of "things to eat before I die". As is rattlesnake, bear, and mybe fuku (10 deaths a year in japan from that stuff )
