Default What would you do with a venison quarter?

My brother in law gave me a very nice sized deer quarter the other day, it barely even fit in my freezer. What the hell should I do with this thing? I like deer meat, but I've yet to cook anything quite this size. What would you guys do with it?

Which quarter is it? Hind leg, I'm guessing?
You can carve a decent roast or two out of it, or part it out to be ground for chili meat.

I'd bring it to a butcher and get it cut up. At least thats what we do with our dear meat in this part of the world.

This, the butcher will tell you how best to have it cut, wrap it for long term storage and even give cooking tips. Usually a roast or two, ground and some summer sausage or jerky. Enjoy that wonderful beast...like Uncle Ted tells us to!
